Today my topic is Parmigiano Reggiano. This is a most delicious Italian cheese with lots of flavor. If you haven't discovered this delight you most certainly should. It can be found with the specialty deli cheeses. It's a little pricey, but so worth it! I love to shave this stuff with a vegetable peeler into salads, but also into homemade soups. It can take a regular salad and make it spectacular. It is also great as a snack with fruit or with wine.
